Chicken Fajitas

Ingredients

Use these easily found ingredients.

Ingredients

Main ingredients
2 lbs chicken breast or thigh, boneless, skinless, cut in 2 inch cubes
7 to 8 medium tomatoes finely chopped
1 tablespoon butter
1 tablespoon vegetable oil
1 tablespoon ginger-garlic paste
Red chili powder to taste
1 teaspoon of turmeric powder
1 green chili slit
2 tablespoon roasted cashews
1 teaspoon garam masala/ spice powder
1 teaspoon dry fenugreek leaves
1 tablespoon honey
2 tablespoon fresh whipping cream
1 inch ginger, julienned
Salt to taste

Ingredients For Marinade
½ cup yogurt, plain, whole milk
1 tablespoon lime juice, freshly squeezed
1 tablespoon vegetable oil
Salt to taste
1/2 teaspoon turmeric powder
Red chili powder or to taste

Ingredients For Bouquet Garni/ Spice pouch
Dry whole spices like:
1 bay leaf,
2 whole black cardamom
5 whole green cardamom
1 inch cinnamon stick
1 teaspoon cumin seeds
1 teaspoon whole black pepper corn
4-5 cloves


Step by step instructions

Follow these proven steps to make this your own

Step1- Marinate Chicken

In a large mixing bowl, add yogurt, lime juice, oil, red chili powder, and salt. Combine everything to make a smooth marinade. Now add chicken cubes to the marinade and coat the chicken cubes well with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 1 hour.

Step2- Thread the marinated chicken and Bake it

Thread the marinated chicken to oven safe metal skewers. Make sure to leave spaces between the chicken cubes for them to grill evenly from all sides. Take a baking sheet and foil it. Loosely crumple up a few foil sheets and place it on the baking sheet. Rest the chicken skewers on the crumpled foil. Now bake the chicken in a pre-heated oven at 400 degrees F for 15 minutes. Remove the chicken and let it cool.

Step3- Make tomato Sauce

Add roughly chopped tomatoes to a food processor and process to make a smooth puree. Strain the pureed tomatoes through a sieve and keep the smooth thick sauce aside.

Step4- : Make cashew powder

Add roasted cashew to a dry spice grinder and grind it to a smooth powder. Keep it aside.

Step5- Make Makhni sauce

Take a large sauté pan and heat oil and butter in it on medium high heat. Add ginger garlic paste. Cook it well until all the raw flavor of the ginger-garlic paste disappears and it turns slightly golden brown in color. Now add red chili powder, and turmeric powder and combine. Add slit green chilies and sauté. Quickly add the strained tomato puree and add some salt to taste. Now add the ground cashew powder. Combine and close the lid and cook for 10 minutes.

Step7- Add Herb, Honey , Cream, and Chicken

Crush fenugreek leaves in your hand and add it to the sauce and combine. Add honey to the sauce and combine. Add the fresh whipping cream and combine again. Close the lid and let the sauce simmer for 10 to 15 minutes. When you open the lid you will see a nice thick, smooth, orangish butter/makhni gravy ready. Now add the juicy, grilled chicken cubes to the makhni/butter gravy and combine. Once again close the lid and simmer. When you open the lid the chicken will look juicier and the whole thing would blend in well. Finally add the ginger julienne and combine. Close the heat. Chicken tikka masala is now ready.

Step6- Add Bouquet garini

In the meanwhile put all the whole dry spices in the cheese cloth and tie it tightly to make bouquet garini or the spice pouch. After 10 minutes, drop the spice pouch in the sauce and let it simmer for 15 minutes to absorb the flavors from the whole spice. After 15 minutes remove the spice pouch and discard it. Now add the garam masala/ spice powder to the sauce and combine.

Step8- Garnish and Serve

Garnish with fresh cilantro and serve hot with rice or rotis/tortillas. Enjoy!

Tip

The choice of the cut is important.. use chicken thigh or breast to make moist chicken tikka masala.
