Recipe Preparation Details

Ingredients

Serves 8

    • 1 lb. large shrimps, shelled completely, deveined and cleaned

    • 1 teaspoon turmeric powder

    • 1 tablespoon asafetida powder

    • 1 tablespoon red chili powder

    • 1 teaspoon salt or to taste

    • ¼ cup oil(olive or vegetable)

    • 2 tablespoon mustard seeds whole

    • 2 tablespoon pickle powder

    • 4 tablespoon lime juice

Prepare it

1Marinate Shrimps: In a mixing bowl add shrimps, turmeric powder, asafetida powder, red chili powder and salt. Mix everything well to coat the spices well on the shrimps. Keep it aside for 5 minutes.

2 Heat oil in a large heavy bottom skillet on medium high heat. Add mustard seeds and let them splutter.

3Now add the marinated shrimps and sauté for 5 minutes until they are cooked and all the moisture evaporates. There should be no moisture left in the pan and oil should start separating from the shrimps.

4Now add the pickle powder to the cooked shrimps and immediately remove the skillet from the heat. Combine everything well off heat. Do not cook the shrimps with the pickle masala to avoid bitter taste.

5Finally add lime juice and mix well. Let it cool.

6Serve cool with bread, rice or roti.

Tip1

You can store this pickle for up to 2 weeks in the refrigerator if only it lasts that long. Store Shrimp pickle in sterilized bottle and keep it refrigerated. To make pickle masala: ½ cup chili powder,¼ teaspoon turmeric powder,1/2 cup fenugreek seeds,1/2 teaspoon split mustard seeds, 1/4 teaspoon asafetida, ¼ cup salt, 2 tablespoons sesame oil. Prepare: Dry roast fenugreek seeds, grind coarsely and keep aside. In a pan heat oil and add split mustard seeds and asafetida, sauté well, remove from heat and then add red chili powder, asafetida, turmeric and salt. Combine everything and add this whole mix to the coarsely ground fenugreek seeds. Combine everything well once again. Let it cool completely and then store in sterilized jar and use as required.
