Mango Cheesecake

I love cheese cake a lot but because of the calories that even a small slice carries, I prefer to satisfy myself by just gazing wistfully at it. So when one of my friends from India requested me to give her a recipe for a western dessert, I immediately thought of a making a cheese cake recipe, but something special that you could eat guilt-free...

What to do with Lamb chops?

Blog - What's cooking

I picked up these real juicy looking lamb chops from the store today. Actually I had been looking at them for a while but was not sure what to do with them. I finally mustered some courage today and bought it. I have been thinking that I must do something good with them as they are slightly expensive too. I don't want to make any curry out of them as they are way to elegant to be wasted in a sloppy curry. In fact I still haven't figured out what to make out of them. Maybe I will do a little more brainstorming to see what i can do with them

Video Shoot of Chicken Burger

I made the chicken burger video today with absolutely no changes. The burgers that I had made the other day had come out so good that I didn't want to make any changes to it. Came out really good this time too.

Eggplant Parmesan Idea

Blog - What's cooking

I had been speaking to my sister off late and she told me that she wanted a recipe on Eggplant Parmesan and that she wanted to make this dish for some party. Also this had to be completely vegan. Well I was just thinking of the numerous recipes that I have come across but none of them were appealing to wow!! the party crowd. I thought I had to do something that will impress her guests. Then when I was glancing through one of my old dessert books, I saw a recipe in which they had used a spring pan. This gave me a great idea, and I thought I could use this spring pan for the Eggplant Parmesan dish to make it look really pretty. I had one of these spring pans lying somewhere at home. I wasn't still sure how this was going to work out but had a vague idea of using sliced eggplants. So I will probably try my experiment on this tomorrow.

Video Shoot of Lamb Chops

Blog - Jo's recipe tryouts

I finally got some time on the weekend to buy some more lamb chops. So today I finally got down to making the video for these lamb chops. There were a few changes that I made to the dish that I created before. First I added some fresh mint and rosemary to the marinade, second I let the lamb chops marinade for an hour before cooking them, third I deg-lazed the nice left over lamb bits on the grill pan with wine to make a nice sauce and lastly I grilled some tomatoes to go on the side with the lamb chops. With all these changes it was a win win dish.

Video Shoot of Eggplant Parmesan

Blog - Jo's recipe tryouts

The weekend was great and after a good break I thought, today would be a good day for making a video of Eggplant Parmesan. I did most of the things as I had done when I made this dish before, except a few changes here and there. I used 2 eggplants this time instead of one. Then I seasoned and grilled the eggplant until they were done, before lining them on the spring pan. Then I created an extra marinara sauce to create an extra layer in the dish. Lastly I replaced the yogurt with ricotta cheese which did not make too much of a difference to the dish except that ricotta is more creamier than yogurt. So if you want to try out using yogurt to make it more healthier, then you are not loosing much. This time the dish was perfect. Also my sister loved the recipe as it looked and tasted good.

Eggplant Parmesan Experiment

So I went to the store and bought eggplant and a few other things with different colors and textures. I bought some bell peppers , tomatoes and some yogurt. Sin ce I was only experimenting I didn't buy a whole lot of things and thought of using some of the things that I already had at home...........

Video Shoot of Lasagna

Blog - Jo's recipe tryouts

I finally made the Lasagna video today and will be soon putting it on my website. The only thing different that I did while making this video is that I used a cast iron pan to make the lasagna. I think it made a good difference to the dish as it gave it a nice smokey flavor. So if you can, then try using a cast iron pan for this dish.
